Burritos for dinner, great in summer

Burritos would have to be my son’s favourite meal for dinner at the moment. He just gets in there and doesn’t stop until he has cleaned his plate. I just love seeing his messy content face after he has demolished his dinner. He just can’t get enough. Here is my recipe, it’s very simple to make and you can have dinner on the table within half an hour.


1 Packet of Mission wholemeal burrito wraps (packet quantity varies from 4-8)

1 pack of burrito mix and mexican seasoning (mainly consists of spices)

1 x Ice berg lettuce, cut up into bite size pieces

1 x Tasty cheese

1 x Punnet of cherry tomatoes, sliced

1 x Can of sweet corn

1 x Can of Kidney Beans

1 x Can of crushed tomatoes

500g of minced beef

3 large carrots, trimmed and diced very fine

1 lrg red onion, diced

1 capsicum, blended into sauce (I use a stickmaster to do this)

Olive oil

Salt & Pepper

Sour cream


Fry onion in a tablespoon of olive oil for 2 minutes, then add carrots and capsicum paste. Stir for approx 4 minutes then add beef mince and stir to brown mince. Then add burrito mix, canned crush tomatoes and kidney beans and stir to combine. Season and simmer for 15 minutes. Set aside.

Place cheese, lettuce, cherry tomatoes and corn in 4 separate serving bowls and place on table. Bring mince sauce to table either in pan or place in serving bowl and bring the sourcream in a small bowl. Once everyone is sitting at the table ready quickly place burrito wraps in microwave and heat according to pack instructions. Usually just 20secs per wrap.

Then everyone can create their own wrap how they wish. For the little ones at the table just place a bit of everything into a bowl and let them eat it with a spoon, as wraps are a little hard for toddlers. It’s a great meal to have in summer as not much cooking involved and the family can just help themselves.
