Tomato &  Bean Pasta with Tuna

This meal is quick and easy, also it can prepared with most ingredients from the pantry. Try without Tuna as a side dish with meat or chicken.

Ingredients

500g pasta, cooked to packet instructions (choose your shape as you know what your child likes best)

700g passata sauce

2 x 400g can diced tomatoes

1 x 400g can of kidney beans

shaved parmesan or grated tasty cheese

1 x punnet of cherry tomatoes

1 x brown onion, diced

1 x red capsicum, diced into a paste using stickmaster

1 x 400g can of springwater Tuna

Olive oil

Salt & Pepper

Steps: First create the pasta sauce. Fry onion in a tablespoon olive oil until softened, add minced capsicum and stir for 1 minute. Add can tomatoes and punnet of cherry tomatoes, cook for 2-3 minutes. Add jar of passata sauce and stir through. Add drained kidney beans and simmer for 1 minute.

Remove sauce from heat. Add Tuna and cooked pasta to pot, gently break up tuna into bite size pieces. Season to taste. Serve topped with cheese.

An easy meal to keep the kids happy.
