Salmon with honey carrots and beans

My little boy just loves Salmon. I am very happy about this as super healthy for him and only takes minutes to cook. He has also never turned his nose up at carrots or beans so I accompanied the salmon with a honey and sesame seed carrot and bean side. He seemed to enjoy the vegetables but the Salmon was the real hit as he gobbled it down in minutes and then started to lick the bowl! Hilarious


1 x Atlantic Salmon

Olive oil

6 x medium carrots, peeled and cut into 4 pieces long ways

1x large handful of green beans, trimmed

1 1/2 tablespoons of sesame seeds

1 1/2 tablespoons of honey


Roast sesame seeds in pan for 1 minute continuously stirring. Add honey to heat through until melted then set aside. Place beans and carrots in a pot and cover with cold water. Bring to boil and cook for 10 minutes or until tender. While vegetables are cooking put your Salmon on. Cook salmon in a teaspoon of olive oil first skin side down for 4 minutes. The turn over for 3-4 minutes or until cooked through. A larger piece may need to be cooked for longer.

Once vegetables are tender drain and place in serving bowl. Pour honey mixture over vegetables, toss and then ready to serve alongside the salmon. Break up the salmon into bite size pieces for your child so it is easy to pick up with a fork. Enjoy!
