Buttermilk & Honey Pancakes
Pancakes have always been popular in our house and its great my son shares our love for them also. I have never met a child who doesn’t enjoy pancakes. Here is a healthy way to make them and still enjoy the delicious flavour.
2 cups of self-raising flour, sift into bowl
3 tablespoons of Honey
2 eggs, lightly beaten
1 cup of water
Fresh fruit of your choice for serving
Mix all ingredients in a bowl and hand whisk until combined well and a creamy consistency appears. Use either light olive oil spray or canola oil spray to grease frypan. Cook pancakes in frypan on each side until golden.
Serve with fresh fruit of your choice. I like to serve with blueberries and grilled banana’s. Enjoy.
